Cabrales is a PDO semi-hard blue artisan cheese from Asturias. It is made from unpasteurized cow’s milk which is sometimes blended with sheep or goat milk. It is matured in limestone caves where the mould grows naturally from the outside as opposed to being injected into the cheese.
It is aged for two to four months and the finished cheese has a strong aroma and a sharp, almost acidic taste. It pairs well with fruit and dried sausage, but also makes an excellent sauce for grilled or roasted meats.
