Ermesenda d’Eroles

If you are fortunate, you may come across this Catalan cheese. It is made on the farm in Alt Urgell from raw cow’s milk. It has a thin, washed rind and a semi-soft texture with eyes (holes) of varying sizes and an almost meaty aroma with a savoury palate.

If you can manage not to just eat it all, it does melt beautifully as a topping.
