Membrillo or dulce de membrillo is quince paste or jelly, sometimes referred to as quince cheese. The quince is a relative of the pear, but the bright yellow fruit is too hard and bitter to eat raw. However, when stewed with sugar it produces a delicious, sweet confection.

Quince paste is normally sliced and eaten with a hard cheese like manchego or zamorano, but it does feature in a few recipes.
