Monte Enebro Cheese

A soft-ripened, pasteurised goat’s milk cheese made exclusively by the Baeze family in Avila. It is made in a log shape and has a blue-black rind.

When young, it is pure white and quite brittle with a mild, almost citrusy taste, but as it matures, it becomes creamier and the flavours develop, becoming stronger.

It is delicious on its own, perhaps with some olive oil and herbs, but it also really good fried with honey.
