Tuna with spicy tomato sauce- this recipe makes quite a dry dish, but if you prefer more sauce, simply add more tomato and white wine, adjusting the seasoning if you wish. Frozen tuna is fine - defrost it in the refrigerator before using.

 1 Large or Two Small Tuna Filletsdiced into cubes
 1 Large or 2 Small Shallotsfinely chopped
 1 Clove of Garliccrushed and chopped
 100 g Chopped Tomatoes
 50 ml White Wine
 1 tsp Pimentón Picante(spicy smoked paprika)
 1 Pinch of Salt
 Small Handful of Flat Leaf Parsleyroughly chopped
 1 tbsp Olive Oil

Heat the oil in a frying pan and fry the shallot and garlic for a couple of minutes until the shallot begins to turn translucent.

Add the pimentón and tuna to the pan, mix well and cook for 2 minutes, stirring occasionally.

Add the tomato, white wine and salt, stir to mix and continue to simmer on a low heat for another 3 minutes.

Mix in the flat-leaf parsley and serve.
