Cod with sobrasada and honey - Bacalao is actually salt cod, which is bought dried and then soaked. However, fresh cod or any firm white fish is fine. Swordfish and monkfish would also work well. Sobrasada is a soft Mallorcan sausage which makes a delicious sauce mixed with honey.

In half the oil, pan-fry the cod fillet for 3 Minutes on each side and then place on a baking sheet
Meanwhile, chop the sobrasada and heat in a saucepan until it begins to melt and then add the honey. Stir well to amalgamate and put aside
Add the rest of the oil and fry the potato slices until they are cooked through, but still firm
Whilst the potato is cooking, pour the sobrasada and honey mixture over the cod and place in a pre-heated oven for about 5 Minutes, until heated through
Drain the potatoes and spread on a plate. Place the cod fillet on top of the potatoes, garnish and serve
