Aubergine with melted cheese and tomatoes - There are many people who think that they don't like aubergine, but that is probably because it can be tough and chewy if undercooked. This dish, however, will melt in the mouth and may come as a pleasant surprise.

 1 Aubeginecut into rounds of approx. 1cm
 Cheddar Cheesegrated
 12 Cherry Tomatoesfinely chopped
 1 tbsp Olive Oil
 1 tsp Dried Parsley

Heat the oil in a frying pan. Add the aubergine and fry gently, turning until both sides are browned.

Transfer to a baking tray and top with cheese, followed by tomatoes.

Sprinkle with a little parsley and place in a hot oven until the cheese is melted. Serve immediately.
