Breaded courgettes with cheese - whilst best served as soon as they are ready, they will actually keep for a day in a sealed container in the 'fridge, to be re-heated later. Get the largest courgette(s) you can find and If you have some powdered cheese, this will make it easier to distribute, but a finely grated hard cheese like Manchego or Parmesan should be fine.

 1 Large Courgettepeeled and cut into approx. 1cm slices
 1 Large Free Range Eggbeaten
 50 g Breadcrumbs
 25 g Powdered or finely-grated Hard Cheese
 2 pinches Salt
 1 Pinch of Black Pepper

Season the courgette slices with a pinch of salt and leave for 10 - 15 minutes to release as much water as possible. Pat dry on kitchen paper.

Add a pinch of salt and pepper to the beaten egg, then add the cheese and mix well.

Pass the courgette through the beaten egg and then the breadcrumbs.

Line a baking tray with greaseproof paper and carefully place the cougette slices on it. Cook in a pre-heated oven for about 30 minutes or until the slices have browned. Alternatively, they can be fried in hot olive oil which makes them more crispy, but can be messy.
