Garlic mushrooms - They are, of course, ubiquitous, but what makes this simple dish Spanish is the dash of pimentón and the splash of sherry. You can, of course, add more garlic to taste.

 250 g Mushrooms, button or chestnut
 4 Garlic Clovescrushed and chopped
 180 ml Dry Sherry
 1 tbsp Olive Oil
 1 tsp Pimentón Dulce(smoked paprika)
 1 tsp Dried Parsley
 1 Small Handful of Flat Leaf Parsleyroughly chopped or torn

Heat the oil in a frying pan or saucepan and add the mushrooms, garlic, pimentón, and dried parsley and stir well.

When turning brown, add the sherry and simmer for a couple of minutes.

Serve garnished with the flat leaf parsley.
