Mallorcan fried fish - the ingredients for this dish are quite variable. Cuttlefish and octopus may be used, but it does require a firm white fish like monkfish. Peas are optional and green peppers and artichokes may be added.

 200 g Monkfishcut into small pieces
 200 g Squidcut into small pieces
 100 g Peeled Prawns
 8 Musselscleaned and steamed
 2 Medium Potatoescleaned and cut into small cubes
 1 Red Peppercored, de-seeded and diced
 3 Spring Onionstrimmed and chopped
 2 Cloves of Garlicpeeled and finely chopped
 50 g Peas
 1 sprig of Fennel
 1 Bay Leaf
 1 pinch of Sea Salt
 1 pinch of Black Pepper
 1 tbsp Olive Oil

Heat the oil in a large sauté pan or earthenware pot and fry the potatoes for a few minutes until browned. Set aside.

In the same pan, soften the red pepper, then add the spring onion, garlic, fennel, bay leaf, salt and pepper.

Stir for a couple of minutes, then add the monkfish, squid and prawns.

Cook, turning gently, for another three minutes or until the fish is cooked then return the potatoes, with the peas and mussels.

Stir and heat through thoroughly and the dish is ready to serve. If at any point the dish is looking dry, add a little water or stock.
