King prawns sautéed with Majorcan sobrasada - This is a very impressive dish, so buy the largest and best quality king prawns you can find. Sobrasada (there are both mild and slightly spicy versions) is availabe from specialist delis and online suppliers.

 6 Large King Prawnshead removed and peeled, but with tail left on
 50 g Sobrasadaroughly chopped
 10 ml Olive Oil
 Chivesto garnish

Heat the oil in a frying pan and begin to sauté the prawns.

Add the sobrasada and as it begins to soften and melt, turn the prawns to coat them.

When the prawns are ready, arrange them carefully on the plate with the remaining sobrasada over and around.

Garnish and serve immediately.
