Scrambled Duck Eggs with Sobrasada - Duck eggs are richer than hen eggs with a lovely deep golden colour. In this simple recipe, they pair delightfully with Mallorcan Sobrasada sausage.

 2 Duck EggsFree Range
 100 g Sobrasada, chopped
 1 tsp Olive Oil
 1 Splash of Milk
 1 pinch Salt
 1 Large pinch of Black Pepper
 1 pinch Pimentón Dulce (mild smoked paprika)
 1 Flat Leaf Parsley, chopped

Heat the oil in a saucepan and fry the Sobrasada for 1 Minutes or so until it begins to melt

Meanwhile, beat the eggs with the milk, salt, pepper, paprika and half the parsley

Add the egg mixture to the pan and stir gently to amalgamate the Sobrasada until the egg is set, but not dried out

Sprinkle with the rest of the parsley and try serving on top of a slice of lightly toasted sourdough bread
