Potatoes with chorizo and bacon - Three basic ingredients and a frying pan, but for all its simplicity, this has always been one of the most popular tapas. For larger parties, you can cook two or three portions at a time (don't do any more or the potatoes won't cook properly) and they will sit happily in the bottom of the oven whilst you continue with the rest of the food.

 1 Large Potato (or equivalent), washed but no need to peel.cut into 1.5cm dice
 2 Rashers of Back Baconchopped
 1 Cooking Chorizo (about 150g)sliced
 1 tbsp Extra Virgin Olive Oil
 1 Pinch of Sea Salt
 1 Pinch of Dried Parsley

Heat the oil in a frying pan and add the potatoes and salt.

Turn the potatoes in the oil and add the bacon and chorizo.

Fry until the potatoes are soft and browned and the bacon is crisp.

Stir in the parsley and serve.
