Duck breast with sobrasada and honey sauce - this appetizing dish is rarely found outside its Majorcan homeland. Sobrasada is a soft Majorcan sausage which is available in either mild or spicy and partners very well with honey.
Heat the oil in a frying pan and cook the slices of duck to your liking - medium-rare is fine for duck; it does not have to be cooked through like chicken.
Meanwhile, break up the sobrasada and add to a saucepan with the honey. Stir over a gentle heat until the sobrasada melts and combines with the honey. Be careful not to overcook it, so that it remains soft.
Plate up the duck slices, add the sobrasada and honey mix, and serve with a garnish of your choice.
