Chicken and potatoes in tomato sauce - a simple one-pot dish which is tasty and comforting at any time.

Heat the oil in a large frying pan or stockpot. Add the onion and garlic and sauté for a few minutes until the onion is translucent.
Add the chicken and potatoes and fry for a few minutes, stirring gently, until beginning to brown.
Add the tomatoes, salt and pimentón. Stir and simmer for a couple of minutes.
Add the red wine and half the parsley. Cover and simmer for about 20 minutes, until the chicken and potatoes are fully cooked.
Serve, garnished with the rest of the parsley.
