 2 Red Mullet Filletsscaled and pin-boned
 6 large King Prawns
 4 tbsp Romesco Sauce
 1 tbsp Olive Oil
 Flat Leaf Parsleyroughly chopped, to garnish

Heat the oil in a frying pan and cook the red mullet, skin side down, for about three minutes, then turn and cook the other side for a minute.

Fry the king prawns until cooked through, but still tender.

Meanwhile, heat up the romesco sauce gently.

Place half the romesco on a plate and sit a red mullet fillet on top. Place three prawns on the fish, garnish and serve.
