San Simón da Costa

San Simón da Costa DPO is a smoked cow’s milk cheese from the Lugo region of Galicia. It is shaped somewhat like a spinning top and the rind varies from beige to dark brown. Smoked with birch wood and aged for about three months, the inside is semi-soft and elastic with a golden colour.

Whist delicious on its own, perhaps with a glass of albariño, the texture lends itself to cooking as it melts easily and goes particularly well with egg dishes.
