Tetilla Cheese

Tetilla is a cow’s milk cheese from Galicia. The word means small breast or nipple and this is actually what this conical cheese resembles. It takes only ten to thirty days to mature.

It has a pale yellow to light brown thin rind and the texture of the cheese is soft and smooth. It has a creamy, buttery taste with a slight bitter edge. It is widely used in Galician cuisine, often as a dessert.
