Valdeón

Valdeón, also known as Picos de Europa or Picos Blue, is produced in the Valdeón valley in the montainous northeast of León. It is made from cow’s milk which is usually blended with a lesser amount of goat’s milk to produce a soft, crumbly blue cheese. It is wrapped in maple leaves.

With a distinctive, strong aroma, its flavour is assertive, but not harsh; slightly salty and quite spicy.

It is usually eaten on its own, perhaps with some fruit or a glass of local cider, but like its cousin Cabrales, it also makes an excellent sauce.
