Black rice - arròs negre in Catalan, it is really a black paella and a paella pan is ideal for cooking. Arborio or carnaroli could be used as a substitute for the rice. King prawn/jumbo shrimp makes a nice garnish.

Don't go picking your own unless you really know what you are doing!) To make the dish vegetarian, simply omit the bacon and perhaps add some sliced peppers.
