Spanish omelette with sobrasada - this is a variation on the basic tortilla española with the addition of Mallorcan sobrasada. Sobrasada is a soft cured pork sausage which is available from Spanish delis and online suppliers. It is available mild or spicy.

Heat plenty of oil in a frying pan and add the potatoes. Cook gently for fifteen to twenty minutes until the potatoes are beginning to brown. Remove from the pan and drain on kitchen paper.
Add the onions to the pan and cook gently for fifteen to twenty minutes until they are just beginning to caramelize. Remove from the pan and allow to cool.
Beat the eggs in a large bowl with the salt.
When the potatoes and onions have cooled, add to the bowl with the sobrasada and turn gently until completely mixed. Allow the mix to stand for twenty minutes.
Heat a little oil to your chosen pan and pour in the mixture. Cook over a low heat for around five or six minutes. You can use a spatula around the edge to keep it in shape and prevent it from sticking.
Flip the tortilla using a large plate or, if you have a tortilla pan, simply close it and invert it.
Heat the other side for a further five or six minutes. Tortilla pans tend to be thinner, so you may need to reduce the cooking time. What you want to achieve is an omelette which is cooked and golden on the outside, but still moist in the middle.
Leave it to cool for around five minutes, then gently slide it out of the pan onto a plate.
