Presa with green sauce - presa ibérica is a cut of Iberian pork from slightly below the tenderloin, in the shoulder area. The marbling makes it very tender. Salsa verde or mojo verde is a piquant green sauce which can be bought ready-made or you can use our recipe  - search "Salsa Verde". The sauce can be served hot or cold.

 500g of presa ibérica, trimmed as necessary
 2 sprigs of rosemary
 large pinch of sea salt
  large pinch of black pepper
 1 tablespoon of olive oil

Season the presa on both sides with salt and pepper.

Heat the oil in a frying pan and fry the presa with the rosemary for four to five minutes on each side. Presa should be served pink.

Allow to rest for two minutes, then cut into slices.

Spoon the sauce onto the serving plate and place the presa slices on top.

Garnish if desired and serve.
