Apple olive oil cake - it can be enjoyed hot or cold and ideally accompanied by a dollop of fresh cream or ice cream. Use a good quality olive oil with a nice flavour. You can use an electric whisk, but it is quite easy to mix by hand.

2 Applespeeled and cut into small dice
200 g Plain Flour
150 g Granulated White Sugar
2 tsp Baking Powder
3 Large Eggs
150 g Plain Yogurt
1 tbsp Runny Honey
Large pinch of Sea Salt
1 pinch of Ground Cinnamon
150 ml Extra Virgin Olive Oil
Caster Sugarto top the cake

Mix together the flour, baking powder and salt.

In a large bowl, beat the eggs, sugar and honey.

Whisk in the yogurt and gradually add the olive oil, mixing to combine.

Fold in the flour mixture followed by the apples and cinnamon and fold until combined.

Pour into a greased and floured 23cm cake tin and bake at 190°c for around forty-five minutes.

Allow to cool, remove from the tin and dust with caster sugar.
