Chistorra sausage with potatoes and egg - this dish is similar to the classic patatas con chorizo, except for the addition of the egg. If you are making a few dishes, the chistorra and potatoes will sit happily in the bottom of the oven and the eggs can be added just before service.

 150 g Chistorra Sausagecut into approx. 4cm lengths
 2 Medium Potatoescut into 2cm dice
 2 Medium Free Range Eggs
 2 tbsp Extra Virgin Olive Oil
 1 Pinch of Salt

Heat half the oil in a frying pan and add the potatoes and salt.

Add the chistorra to the pan and cook, stirring occasionally until the potatoes are soft and browned.

In another pan, fry the eggs in the remaining oil.

Plate up the potatoes and chistorra and carefully place an egg on top of each portion.
