Spinach with potatoes and chorizo - a quick and warming dish with a classic combination of ingredients.

2 cooking chorizo (about 300g) sliced
500 g 450g of spinachwashed if necessary
1 medium onionchopped
1 large potato (or equivalent) peeled and diced
2 cloves of garlicpeeled and chopped
100ml of white wine
pinch of pimentón (smoked paprika)
pinch of sea salt
1 tablespoon of olive oil
flat leaf parsley chopped, to garnish

Boil the potato until cooked, but still firm, drain and set aside.

Heat the oil in a large frying pan or stockpot, add the onion and chorizo and sauté, stirring occasionally, until the onion is translucent.

Add the diced potato, spinach and garlic. Mix carefully and cook gently for about two minutes until the spinach is wilted.

Pour in the wine, salt and paprika and cook on a medium heat until reduced.

Portion and serve, garnished with the parsley.
