There are many versions of this canapé, but this one is quick and easy and one of the benefits of this dish is that it can be made in advance. You can add extra toppings, such as chopped cherry tomato, cucumber or caviar. Dill is the traditional garnish, but flat parsley is more Spanish.

Cut three slices of baguette and drizzle the top very lightly with olive oil.
Cut or tear a couple of slices of salmon to fit and place them on the bread.
Spoon a dollop of cream cheese on top, dust with a little black pepper and garnish it with the parsley or dill.
