Octopus on a bed of sweet potato - a simple, but impressive dish – definitely one of those which is more than the sum of its parts. Serve with a garnish of your choice.

 2 large or 4 small octopus legs
 1 Sweet Potatopeeled and cut into chunks
 pinch of Sea Salt
 pinch of Black Pepper
 Extra Virgin Olive Oil
 1 tbsp Flat Leaf Parsleyfinely chopped
 pinch of Black Pepper
 pinch of Sea Saltif using fresh cod
 3 tbsp Olive Oil
 Vegetable Oilfor frying
 Stoned Olives, black or greento garnish

If the octopus is raw, boil it for thirty to forty minutes and allow to cool.

Boil the sweet potato until soft, then mash or purée with a little olive oil, salt and pepper.

Meanwhile, cook the octopus legs under a grill for a few minutes on each side.

Plate up the sweet potato and place the octopus legs on top. Drizzle with olive oil or dressing, garnish and serve.
