Salmon with potatoes and poached egg - This mini tower is quite easy to make and, with care, the presentation can look really good. You can make as many as you feel comfortable doing at the same time. Just multiply the ingredients accordingly.

 1 Fillet of SalmonCut into approximately 6cm x 6cm square
 1 Medium PotatoSliced quite thinly, no need to peel
 1 Free range Egg
 2 Spring Onions (scallions)Trimmed and cut into 2cm pieces
 1 tbsp Olive Oil
 1 Pinch of Salt

Fry the potatoes in olive oil with the salt. Just before they are ready, throw in the spring onions so that when the potatoes are browned, the spring onions will also be cooked.

Pan-fry, grill or bake the salmon.

Meanwhile, poach the egg.

To plate up, make a tower starting with a slice of potato and alternating with spring onions. Place the salmon on top and finish with the poached egg.
