Fried manchego cheese - This delicious tapa is in essence a very simple dish, but the trick is in ensuring that the cheese is adequately coated and in the time and temperature of the frying. You don't want to end up with an empty shell of fried breadcrumbs.

 Manchego Cheese, cut into 2cm cubes or triangles of 1cm thickness
 Free Range Egg(s)beaten
 Breadcrumbs
 Plain Flour
 Oil for Frying

Coat the pieces of cheese in egg, then flour, then egg, then breadcrumbs. Ensure that the pieces are thoroughly coated.

You can fry the cheese in a pan of oil of sufficient depth to cover the pieces, a deep-fryer or an air-fryer (the healthy option). Make sure the oil is hot (180-190c) before putting the cheese in and cook in small batches so as not to lower the temperature.

Cook until golden-brown and then drain on absorbent paper.

Serve drizzled with honey or with dips of your choice.
