Spicy fried mushrooms - the amount of chilli may be adjusted to taste and you can omit the ham to make the dish vegetarian. Crusty sourdough bread makes the ideal accompaniment.

 250 g Button Mushroomssliced
 250 g Chestnut Mushroomssliced
 6 cloves of Garlicfinely chopped
 1 small Red Chillifinely chopped (or substitute teaspoon of chilli flakes)
 4 Cloves of Garlicpeeled and sliced
 50 g Serrano Hamfinely chopped
 125 ml White Wineor dry sherry
 1 tsp Pimentón Picantehot smoked paprika
 1 small handful of flat-leaf parsleychopped
 1 pinch of Sea Salt
 1 pinch of Black Pepper
 2 tbsp Olive Oil

Heat the oil in a frying pan and sauté the mushrooms for around ten minutes, stirring occasionally.

Add the ham, garlic, chilli and pimentón and continue to cook for two minutes.

Add the wine and simmer gently for a couple of minutes, until the liquid has evaporated.

Stir in the parsley, salt and pepper and serve.
